Raw Apple Cake Adapted from my momma’s recipe

Raw Apple Cake

Adapted from my momma’s recipe box

2 scant cups of kamut flour
2 cups sugar
½ cup brown sugar
1 tsp baking soda
2 tsp pumpkin pie spice
¾ tsp salt
3 beaten eggs
½-¾ cup coconut oil
2 tsp vanilla extract
4 cups chopped apples
1 cup chopped walnuts or pecans

Preheat oven to 350℉. Grease a 9x13 pan well.

Combine dry ingredients in a medium size bowl, mix, and set aside.

Combine wet ingredients in a large bowl and mix until well combined.

Mix the dry ingredients into the wet ingredients and combine just until there are no dry spots, but be careful to not overmix. Add in the chopped apples and nuts last. Batter will be very thick & heavy. (See tips on my website.)

Pour batter into a greased pan & bake for 50-55 minutes.

Serve with a scoop of vanilla ice cream & a drizzle of my caramel glaze.

HOMEMADE SAUERKRAUT!!

A few weeks ago I caught one of my littles digging into the sauerkraut. Later that night she had an upset stomach, but how amazing that she knew what to grab out of the fridge to make her gut feel better!! Sauerkraut has amazing benefits … just do a quick Google search.

I’ve tried a few recipes and just adding a good salt like @redmondrealsalt is my favorite. Basic & comforting! We love it eat it with meats, potatoes, fried eggs & avocado (for breakfast), and just plain.

Once the sauerkraut has fermented to your liking, put a regular lid on the jar and keep it in the fridge.

Sneak peek! One week until we close on our new place!! Some day I hope to have a sweet @joannagaines style greenhouse with beautiful beds surrounding it, but, for now, I have two HUGE beds to work with. They have posts for shade which is a win but I think I’m going to have to get creative for creating some little walking paths inside these beds so I can get around and tend to and harvest everything.

I’m hoping to finally grow enough sugar daddy sweet peas this winter to satisfy the needs and wants of the whole family! I have also fallen head over heels for beets since I started gardening. If you live in zone 9, these are two veggies you can start planting anytime now (and for the next 5-6 months!) by seed = cheap food!! I’m excited to figure out the water situation and start growing!

Happy *Almost* Fall! It almost feels like fall today in the Phoenix area which is glorious after the extra hot summer we had. 🔥

This week I’m packing up all my red, white, & blue 🇺🇸 and replacing it with yellows & oranges to stage my home. 🍁🎃

I’m also looking at the lower temps & thinking I need to get some fall gardening going … fruits & veggies for our new house and something to fill-in the beds so we can sell our current home.

House + land shopping has been going on for 3 year

House + land shopping has been going on for 3 years & we’re hoping we finally found our spot a few weeks ago! We’ve been under contract for almost 2 weeks, inspections came back better than expected, & the appraisal is 👍🏻. The kids keep asking if we’re buying “the house” & I tell them things are moving forward. We’re cautiously excited 🙏🏻🙏🏻and packing boxes. 🚚📦

If everything works out, there will be more details to come, but in the mean time, check out the super cute wallpaper that’s in the mud room. Gilbert has been home since 1987 & hoping to keep it my home for years to come!! 🏡

What’s your favorite part of your home? The hardest thing to leave will be friends … my village … people who help me raise my kids as if they’re family! Thankfully we’re staying super closer to where we are now! Our lives have been blessed for the last 12 years that we’ve lived in this area. Moving will be very bittersweet. 💗

Several Sundays ago, we found ourselves enjoying a drizzly day at the Laie Hawaii Temple … taking in the breathtaking views of mountains in one direction & turquoise ocean waters in the other direction. When the location for this temple was chosen over 100 years ago, it was truly inspired! Of course the gardener in me loved strolling the grounds & wondering which plants & flowers might survive in Gilbert, AZ. 👩🏼‍🌾🌵

This was the first time anyone in our family had been to Hawaii. Hawaii was not all that I imagined (not quite sure what I expected … like I expected it to be more humid and hot than it was), but the beaches are insanely gorgeous and fairly vacant. The kids’ favorite parts of Hawaii were the @polynesianculturalctr (we spent two days there!), playing on the beaches, and surf lessons with @buhsoh is still a DAILY topic of conversation! 🏄🏼‍♀️ What an amazing thing to be able to visit a tropical island in the middle of the ocean!

I’ll share some highlights from our trip in my stories! I’m a homebody so I haven’t been to a ton of places. I’d love to know what some of your favorite spots are for family vacay! 🏖️

UPDATE: I made this recipe on Sunday afternoon (keep in mind it was probably 110*F + on Sunday!) I made the recipe with unsalted butter and double the walnuts. Glad I added the extra nuts!! The flavor is very simple & not overly sweet - the oatmeal is the star of the show! I had to refrigerate the dough because it was so sticky from the (hot) butter. I baked my cookies for 7-8 minutes and preferred the longer-baked cookies. Wish I would’ve baked some for 1-2 minutes longer to compare. Cookies are thin & a bit chewy 😋 … if you want crispier cookies, you might reduce the brown sugar & bake longer. I’m not a fan of day-old cookies but was pleasantly surprised by how good they were in Monday. Maybe even a little saltier! By Tuesday, they lost their pizzazz.

Last night I was going through some of my mom’s things and I came across her recipe for oatmeal cookies. My mom baked these cookies a bunch of times when I was a teenager and I took this recipe with me as a newlywed. You can see how many times she ✔️& erased next to each ingredient. This was a recipe that made her family feel loved! 💗

I remember these cookies being a little on the thin & crispy side & super delicious! The perfect, comforting oatmeal cookie!!

I stopped making the recipe because of the shortening, but I think you should be able to do a 1:1 swap for realllll butter! If you make them {& possibly play with the recipe}, let me know how they turn out for you! I hope you love them & that they bring a smile to your face!!

A couple weeks ago I spoke in church about how I stay true to my beliefs. I spoke a little bit about what types of things I try to make time for in my life & how that has an effect on staying true to my beliefs. For example, if I believe in the importance of families, how am I spending my time with my family? If I believe in seeking out things that are lovely and praiseworthy, what books, shows, and music do I allow into my home and mind?

For the last 6 months, I’ve tried to replace some of my time each week that I wasn’t being used to the fullest with going to the gym. I’ve never been into exercising, hated sweating, or I thought gyms were not for me, but I decided to try something new because I knew I loved yoga. My first 60 min hot yoga class kicked my trash!!

Now go sweat my brains out and have come to enjoy a variety of classes like barbell 🏋🏼 & barre 🩰and I’m willing to push myself out of my comfort zone in new ways. Even when it’s hard work, it’s relaxing and so good for my spirits.

This is my why for exercising but also my why for so many things in life … cooking, gardening, homeschooling, music, and more. I find rest, relaxation, & so much satisfaction in these hobbies. The latest TV show & social media can not give those things to me. Yes, IG is where I’ve learned to garden, meal plan, and so much more, but give it a meaningful place in your life & then go and DO!! It’s something we’re all working on, but I promise you’ll be happier!

Not much is surviving in this Arizona heat! My plants are dying, dead trees can be seen around town, and there’s no end of this heat in sight!!

This morning I ran out front and was surprised to find a few yellow pear tomatoes … on the west side of my house!! I think this little plant is surviving because it’s up close to my house and gets shade until the early afternoon and then shade from a tree for part of the later afternoon.

Looking forward to cooler temps so I can clean up my yard & get back to gardening!!

In Zone 9 (Maricopa County), it’s much too hot to grow lettuce and greens in the summer. Buuut …. You can plant a few pennies worth of beet seeds and grow greens all year! This is a perfect way to get cheap greens to bulk up smoothies for my family.

This beet was in the ground for over a year and blessed us with lots of healthy greens! 🌱🌱🌱
