Dark Chocolate Chia Pudding

My kids can’t get enough of my chocolate chia pudding! Chia pudding is the best breakfast to prep the night before if you know you’re going to have an extra busy morning or need something yummy to mix things up a bit. 🍫

Chocolate chia pudding is like dessert for breakfast but it’s packed with good stuff for our bodies. Chia seeds are high in omega-3 fatty acids, which can help with brain function, heart health, and reducing inflammation. Chia seeds also contain soluble fiber. Cacao powder is high in antioxidants, rich in iron, and lifts our moods. I use real organic maple syrup to sweeten the pudding a little and my favorite @redmondrealsalt to get trace minerals into our bodies.

For toppings, we love lots of fresh berries, sliced bananas, toasted coconut, sliced almonds, and homemade {sourdough} granola.

Dark Chocolate Chia Pudding
Makes about 6 cups/6 servings

3/4 cup cacao or cocoa powder
1/2 cup pure maple syrup
1-1/2 tsp cinnamon
1/4 tsp salt
1-1/2 tsp vanilla extract
4-1/2 cups milk of choice
1-1/2 cup chia seeds
(Measurements do not need to be exact … for ex: I just eyeball the maple syrup.)

1. In a mixing bowl (I like the glass Pyrex ones with a lid), mix the cacao powder and milk until there are no clumps.
2. Add in the rest of the ingredients, except the chia seeds, and whisk until well combined.
3. Add chia seeds and whisk.
4. Cover bowl & refrigerate for several hours or overnight. It should be thick like pudding. *Sometimes I like to give the mixture an extra stir or two to help the chia seeds from clumping up, but it is not necessary.
5. Store leftovers in an air-tight container in the fridge for several days.

I got asparagus starts from @summerwinds about 5 years ago. Still alive and growing! … on the west side of my house = very hot temps and lots of sun during our Phoenix summers.

The two little pots/starts I purchased have not been enough for my family except maybe for something like a pizza topping. I am not able to harvest enough at one time for dinner side. Usually my kids, even one that doesn’t care for asparagus, just eats it raw straight out of the garden. So sweet!

Tip: Plant where you don’t care how it looks cause it is not pretty in the fall! I’d love to plant asparagus again at my new house. I think I’ll give them their own bed towards the back where they can visually be hidden by the rest of my garden. Overall, asparagus is VERY low maintenance & keeps coming back year after year even when I don’t treat it as I should. 😁

Whenever I see a ladybug, I know good things are coming and a rush of happy memories are revisited. Our wedding luncheon was a picnic theme with ladybugs, a favorite friend left me with a hand-drawn ladybug “tattoo” named Bartholomew in the wee morning hours before leaving for two years, ladybug canisters on my first kitchen counters, and being presented a ladybug ring when my husband proposed to me so that I could go ring shopping and pick out exactly which engagement ring I wanted. 💗

I hope this little ladybug friend brings me lots of good luck this week! We could all use a little good luck, right?

My mom always went all out for Thanksgiving. 🦃Endless days of baking & cooking!! One of my faves was always her stuffing and I’m so thankful I spent some time with her one Thanksgiving week and learned how to make her quick, easy, doctored-up stuffing! I bet you’ve got most or all the ingredients in your kitchen NOW. Grab your stuffing mix and add some fresh veggies and herbs to take your stuffing from boring to intriguing. Make this today and just reheat tomorrow in the oven right before eating time.

Doctored Up Stuffing
•Approx 20 oz stuffing mix (herb flavored)
•1 Tblspn butter
•4 cups broth (chicken or veggie)
•3-5 celery stalks, chopped
•1 potato (try gold!), shredded
•2 large carrots, shredded
•1 small handful of fresh herbs (or 1-2 tsp dried)
•1/2 large onion, diced

1. Bring broth to boil & add butter.
2. To simmering broth, add celery and cook for a few minutes until slightly softened.
3. Add herbs, potatoes, carrots, & onion to simmering broth & mix well. (I like basil, oregano, thyme, & parsley the best for this recipe.)
4. Allow veggies to simmer in the broth for a few minutes, until softened.
5. Add stuffing mix and stir to moisten all bread.
6. Spray a 9x13” casserole dish & add your stuffing to the dish.
7. At this point you have two options, cover and store in the fridge for a couple days & bake right before serving OR bake immediately and serve.
8. Bake at 350* for about 15-20 minutes or until thoroughly warmed.

PS I like the sourdough stuffing mix from Costco or Pepperidge Farms best to avoid high fructose corn syrup. 😉

The holidays are upon us! 🎄🎄🎄 I spent a few days this week on a fun baking project for a special event. Man! I sure missed my wall oven!!

Pie isn’t always my favorite or go-to dessert but I’m loving galettes! A much simpler version of a pie with a buttery, flakey crust.

Tip: if you’re growing mint in your garden, it is an amazing addition to your berry pie filling!! 🍓

Raw Apple Cake Adapted from my momma’s recipe

Raw Apple Cake

Adapted from my momma’s recipe box

2 scant cups of kamut flour
2 cups sugar
½ cup brown sugar
1 tsp baking soda
2 tsp pumpkin pie spice
¾ tsp salt
3 beaten eggs
½-¾ cup coconut oil
2 tsp vanilla extract
4 cups chopped apples
1 cup chopped walnuts or pecans

Preheat oven to 350℉. Grease a 9x13 pan well.

Combine dry ingredients in a medium size bowl, mix, and set aside.

Combine wet ingredients in a large bowl and mix until well combined.

Mix the dry ingredients into the wet ingredients and combine just until there are no dry spots, but be careful to not overmix. Add in the chopped apples and nuts last. Batter will be very thick & heavy. (See tips on my website.)

Pour batter into a greased pan & bake for 50-55 minutes.

Serve with a scoop of vanilla ice cream & a drizzle of my caramel glaze.
